Ridiculously Easy Healthy Pumpkin Spice Protein Pancakes Recipe

As Halloween approaches, this Fall, I have been obsessing over PUMPKIN PURREE! Seriously, pumpkin puree has been making its way into a number of my snacks and dishes, including these delicious, Pumpkin Spice Protein Pancakes.

These healthy pancakes are, just like the title, RIDICULOUSLY EASY! They are extremely simple and take only about 8 minutes to make from start to finish. Clean-up is a breeze with this recipe, and for the mama who is having “one of those days”, (you know, those clingy days), they can be easily prepared with one hand holding your baby.

Furthermore, these Healthy Pumpkin Spice Protein Pancakes not only taste extremely great (even my toddler loves them), they are packed with whole foods and nutrients that will help you fuel your body sufficiently for the day ahead. As this recipe is whole foods based, these guys are also a great food source to support healthy breastfeeding. They are gluten free, dairy free, and contain no whey protein, which brings me to talking about how the protein powder in this recipe is highly effective, without being an aggravator of dairy allergies or sensitivities.

Moreover, this protein powder (Redcon1’s MRE Powder) is whole food based protein, containing protein sources from beef, chicken, egg, and salmon (don’t worry, you certainly can not taste it). What you can taste, however, is its yummy flavor as the Sweet Potato Pie option brings a great flavor to these pancakes. Additionally, this protein powder is extremely beneficial for breastfeeding moms and busy moms in general, as consuming whole foods is an essential part of a postpartum mom’s healthy diet and will provide you with a high serving of protein with little work on both the cooking and eating end.

So, why are these pancakes such a great option to include in your every-day healthy diet?

The fact of the matter is, most individuals (especially busy and/or breastfeeding moms), who do not focus directly on consuming the appropriate serving of protein throughout their day, simply do not consume enough to healthfully sustain their body, as well as gain the results that they desire in the gym. In addition to that, even individuals who are placing a focus on protein consumption find it hard to consume the recommended amount of protein. With that said, these are packed with protein!

Protein plays a huge roll in an active mamas life. Not only is it the building blocks to growing and sustaining any kind of muscle mass, but it is literally what keeps our bodies functioning well, throughout the day.

Henceforth, as a postpartum mom (keeping in mind that after you have a child, you are always considered “postpartum”), the general recommendation is to consume the size and thickness of your palm and should be consumed at every meal and snack every day. Of course, this serving size can fluctuate up in cases such as you are lifting heavier and more frequently in the gym, depending on your weight/figure goals, or because you have breastfed more frequently than normal during a stretch of time. Overall, paying attention to how your body feels, while keeping those recommendations in mind, and fueling it accordingly is usually your best bet.

 ½ cup Gluten Free Oats or Cream Of Rice
 2 Redcon1 MRE Powder in Sweet Potato Pie (USE 10% OFF CODE: T10TaylorBe)
 ¼ tsp Pumpkin Pie Spice
 ½ Banana
 3 tbsp Pumpkin Puree
 ¾ cup Water

Place oats/cream of rice, MRE powder, pumpkin pie spice, banana, pumpkin puree, and water in blender.

Blend ingredients together until texture is smooth with no lumps.

Spray a non-stick pan with cooking spray and heat for about 1 minute. Once heated, pour pancake batter onto pan. Pancakes should be about 3 inches in diameter.

Cook until top of pancakes start to bubble, pancakes become firm enough to flip, and underside browns. Flip and repeat the same on the other side.

Remove from pan and top with all of the yummies! In this picture, I topped them with banana slices, cinnamon, and sugar-free maple syrup. I also enjoy adding gluten free granola on top and the occasional dark chocolate bits (when I feel like treating myself).
